INGREDIENTS:
1 cup red quinoa
2 cups vegetable or chicken stock
2 tablespoons curry powder
1 teaspoon turmeric
1/3 c. chopped onions
1/3 c. chopped red pepper
1/3 c. chopped green pepper
DIRECTIONS:
Add red quinoa, curry powder, turmeric and peppers and onions to 2 cups of stock. Cover and simmer about 10-15 minutes, until all the water is absorbed. Serves 4
